Roasted Red Pepper & Butternut Squash Soup

Today i wanted to share an amazing recipe that is perfect for this time of year. It's super simple to make and requires only a hand full of ingredients. 


You'll need 

Begin by preheating your oven at 400*F

- 2 small butternut squashes 
-2 red peppers 
-one small onion 
-one apple ( I used a McIntosh apple)
-3 cups of broth ( I used vegetable , but chicken would work just fine)
-olive oil
-salt and pepper to taste
-1/4 cup of half and half
-3 cloves of garlic




Begin by pealing and deseeding the butternut squash. After chopping it into cubes toss it in a pan and add some olive oil, salt, and pepper and place it in the oven. Depending on your over, roast it for approximately 20-30 mins. 


The same process will apply to the peppers except for the roasting time. Leave them in the oven for approximately 15 mins. 


While the roasting is taking place you can begin cooking the onions, garlic and apple. 


Once the onions are soft, add the squash and peppers and top them off with the broth. Bring the mixture to a boil and simmer for 20 mins. Just before removing it off the heat add in the cream.


Take your soup and begin blending with either a food processor or blender.  


Voila, your finished product. Finish off with a garnish and some toasted french bread.
